Freeze-drying is a process where fruits are deeply frozen, placed in a refrigerated vacuum and ice crystals in the product are sublimated into water vapor, while the cell structure of the original product remains. Although freeze-dried fruits are small and light-weight, studies show that the antioxidants phytochemicals found in the fruits’ fresh state is retained at levels almost as high after freeze-drying.

Process

Freeze-drying is a process where the natural products are frozen and then placed into a vacuum. The ice crystals formed in the product are then sublimated into water vapor, while the cell structure of the original product remains intact. Freeze-dried products retain their original nutritional value, texture, shape, and taste. The end product is as fresh as the original food, with just the water removed! When rehydrated with water, it rehydrates to resemble the original natural product. Freeze drying, technically known as Lyophilisation, is a premium technology used for dehydration where the original texture, aroma, flavor, and nutritional values of the products are retained as it is. It is typically used to preserve a perishable material or make the material more convenient for transport. In brief words, freeze-drying is a 3-step process that starts with freezing the food, then placing it in a vacuum chamber with low heat. This causes an interesting thing to happen: the water leaves the food in the form of ice and vaporizes instead of going liquid. Which is also known as the sublimation process. During the entire process, no artificial colors, flavors, or preservatives are added. Post Freeze Drying, processes like Sieving, Gravity separation, Sorting, and Metal detection are carried out to ensure that the final product is free from any contamination and fully meets customer requirements.
